Red Orach is a very ornamental edible plant with stems and leaves of vibrant crimson. It's in the same family as spinach and is native to Europe and Asia. Young, tender leaves and sprouts are a luminous red and can be used in salads and salad mixes or grown as a microgreen. Older leaves fade to green and have a spinach-like flavour. You can cook the mature leaves as a nutritious leafy green. The plant produces tall flower spikes with seeds that start deep crimson and fade to tan. The flower spikes can be used as a garnish or as fresh flower or dried flower arrangements.
