Ayoo look out, the Cumquat season has begun! You know Winter has arrived when Cumquats start coming through, ready to be made into marmalade. You can eat these little citrus treats, seeds, skin and all! The flesh has a sweet-tart and zesty flavour, while the skin is sour and slightly floral/sweet. We are currently getting these from a local grower in Byron Bay.

W A S A B I 🌱
It's time we told you something that may or may not blow your mind... 🤯 Did you know the Wasabi in those green packets at sushi train isn't Wasabi It's mainly horseradish, colouring and sugar. If you’re yet to taste and cook with the real deal, you ought to do so. It's next level. We’re lucky enough to have it available for our legendary chefs.

Recently, you may have seen that we took a trip to Tasmania to see the only commercial Wasabi farm in Australia. We invited the Head Chef of sushi___room shimpeiraikuni to come with us to visit Esmè tassiewasabifarmer and her passionate team from realshimawasabi and it was breathtakingly beautiful.

Esmè and her team are passionate about high-quality Wasabi and sustainable farming! They use rainwater to water their crops and introduce species of good bugs to get the bad bugs, rather than relying solely on chemicals. The best part? You can use the entire Wasabi plant - leaf, flower, stem and root, making it a no-waste product.
